Blueberry Banana Bread Muffins

Ingredients:adapted from Daily Garnish
- ¾ cups white flour
- ¾ cups wheat flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ cup brown sugar
- ¼ cup white sugar
- ½ teaspoon cinnamon
- 2 large ripe bananas
- 1 teaspoon vanilla
- 2 eggs
- ½ cup Greek yogurt (preferably vanilla or honey flavored)
- 1 cup fresh/frozen blueberries
Preheat oven to 350 degrees F. Combine bananas, eggs, sugars, vanilla, and greek yogurt. Sift in the flours, baking powder, cinnamon, and salt. Fold in blueberries. Pour batter into a greased loaf pan or greased muffin pan. Pop into the oven and bake for one hour (in loaf pan) or 20 minutes (muffin pan). Good hot, but even better the next day for breakfast. Yummy! |
