Blueberry Banana Bread

Sometimes, a girl has just gotta have something sweet. And for me, that is like every hour. ;) This is a fantastic recipe from Emily over at Daily Garnish that totally hit the spot! (plus, it used up the brown bananas sitting on my cupboard...)

Blueberry Banana Bread Muffins

Ingredients:
  • ¾ cups white flour
  • ¾ cups wheat flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup brown sugar
  • ¼ cup white sugar
  • ½ teaspoon cinnamon
  • 2 large ripe bananas
  • 1 teaspoon vanilla
  • 2 eggs
  • ½ cup Greek yogurt (preferably vanilla or honey flavored)
  • 1 cup fresh/frozen blueberries
Directions:
Preheat oven to 350 degrees F. Combine bananas, eggs, sugars, vanilla, and greek yogurt. Sift in the flours, baking powder, cinnamon, and salt. Fold in blueberries.

Pour batter into a greased loaf pan or greased muffin pan. Pop into the oven and bake for one hour (in loaf pan) or 20 minutes (muffin pan). Good hot, but even better the next day for breakfast. Yummy!
